Wow this was easy, who knew that when you eat shortbread you are literally just consuming a slab of butter with some sugar and flour sprinkled into it? But it tastes really good! I went for a classic Delia recipe which used semolina too, I think it’s all about the texture and that comes form the semolina. However, I didn’t make one big round one, rather, I rolled the dough out and used cookie cutters to make pretty hearts instead. This has the added bonus of reducing the cooking time from 1hr to only 15 mins, and when you’re waiting to have tea and shortbread that makes a BIG difference!
I would strongly suggest this for your last minute baking needs, it looks impressive but takes minimum effort and time.
