Really Good Bakewell Tart

This is a recipe from my sister Amber, she made it for us about a year ago at my parents house, it was tastetastic. Here’s the recipe:

200g Plain flour
115g Cold unsalted butter, diced
25g Caster sugar
1 Egg yolk
Pinch of salt

150g Soft butter
150g Caster sugar
4 medium eggs
150g Ground almonds
40g Plain Flour
Half a jar of best homemade jam (I used raspberry)
Handful of flaked almonds

Put flour and salt into bowl and rub in butter with fingertips (I suggest using a boyfriend for this). Stir in sugar. Mix in egg yolk and bring dough together with a palette knife. Chill in fridge for 30mins.

Preheat oven to 160ºC.

Roll out pastry and line a 25-28cm flan tin. line the pastry with baking parchment and fill with baking beans. Bake blind for 15mins, remove paper and beans and bake for another 15mins. Remove from oven and turn up to 180ºC

In a mixing bowl beat together butter and caster sugar until light and fluffy. Gradually beat in the eggs. Mix together ground almonds and flour and fold into mixture.

Spread the jam over the pastry case then add the almond mix, spread out to fill case. Scatter flaked almonds on top and bake for 40mins until golden brown.

  1. Miss Kimberly (not sure if we’re allowed to say your surname on here in case of weird intercyberhighway freaks stalking you) – I LOVE the new website, you are a very clever pair.

Remember us when you hit the big time xxx

  2. Hmm, true. Can you put a restraining order on someone you live with? Probably entirely possible considering the size of your new place!

  3. Go to and sign up! You can have multiple email addresses with the same picture, and pretty much any blog you might comment on should show it if you use one of those email addresses. Doesn’t integrate with any big apps like Facebook yet, sadly…

  4. New look website is AMAZING!! And get you winning a prize from Mr Hemingway for your cake stand! Well impressed all round – clever peeps you are 🙂
